Good Food Friday

Sorry this is late folks, but here is another tasty and easy recipe for your enjoyment, especially with this nice weather!
Chipotle Grilled Chicken with Avocado Sandwich
I found this recipe on Simply Recipes and I loved it.

Ingredients:
3 Tbps olive oil
1 Tbps lime juice
1/2 tsp chipotle chile powder - give or take depending on how hot you like your food
1 pound boneless chicken breasts
4 small slices of Monterrey jack cheese
4 sets of hamburger buns
1 avocado, peeled, seeded and sliced
lettuce of your choice
mayonnaise

1. In a shallow bowl, stir together the olive oil, lime juice, and chipotle chile powder
2. place chicken breasts between two sheets of wax paper. Use a meat mallet to pound the breasts to an even thickness of about 1/2 inch. Cut off excess fat. Place chicken in marinade, turning to coat. Cover with plastic wrap. Let marinate for at least 15 min, preferably an hour.
3. Grill your chicken until cooked through. Once you've cooked the chicken pieces on one side and flipped them, add a slice of cheese to the chicken. Melt cheese and toast buns then assemble with mayo, chicken/cheese, slices of avocado, and lettuce.
