I know, I've already posted couscous recipes, but I don't think y'all understand how good it can be. So today I present to you.........
Tomato Basil and Couscous Salad
Ingredients:
2 1/4 cups canned chicken broth
1 10-ounce box couscous
1 cup chopped green onions
1 cup (generous) diced seeded plum tomatoes
1/3 cup thinly sliced fresh basil
1/2 cup olive oil
1/4 cup balsamic vinegar
1/4 teaspoon dried crushed red pepper (I omitted this part, but add to taste)
cherry tomatoes, halved
Prep:
Bring broth to a boil in medium sauce pan. Add couscous. Remove from heat. Cover, let stand 5 minutes. Transfer to large bowl. Fluff with fork. Cool.
Mix all ingredients except cherry tomatoes into couscous.
Season with salt and pepper. (can be made 1 day in ahead. chill). Garnish with cherry tomatoes.
Serves 6
I made this as a side with salmon and it was delicious if I may say so myself. So enjoy!

What a beautiful picture. I wonder who came up with the concept, forced you to pose, and then took it?
It is possible that I grazed my thumb with a knife while removing a sticker from my apple. Stupid I know, but life happens.
